Protein Packed Muffins w/ Sea Moss

sea moss

If you can’t find strawberry sea moss, you can substitute for another ingredient with a similar texture, such as a smash fruit spread or your favorite nut butter.

Sea moss provides a variety of minerals, antioxidants, and fiber, making it a nutrient-rich addition to smoothies, baked goods, and other recipes.

Dry Ingredients:

  • 2 cups almond flour

  • 1/4 cup arrowroot starch

  • 1 tsp. baking soda

  • 1 1/2 tsp. baking powder

  • 1/2 tsp. sea salt

  • 1/2 cup coconut sugar

  • ½ cup dried shredded coconut

  • ¼ cup goji berries

  • 1 scoop protein powder

  • ¼ cup flaxseeds

Wet Ingredients:

  • 1/2 cup hot water

  • 1 Tbs. lemon juice

  • 1 cup strawberry sea moss

  • 4 Tbs. unrefined coconut oil, melted

  • 2 tsp. vanilla extract

  • 2 Tbs. whole chia seeds

STEPS:

  1. Line muffin tins with parchment paper cups OR  grease generously with avocado oil or grassfed butter.

    Preheat oven to 350°F.

  2. Place all wet ingredients into a bowl and mix well. Let sit for 10-minutes in order for the chia seeds to expand. Transfer to a blender and blend until smooth, then set aside.

  3. In a large bowl, whisk together the dry ingredients.

  4. Then, fold the wet ingredients into the dry mixture until just combined.

  5. Fill your prepared muffin tin to the top with batter and in the middle of each muffin add a teaspoon of sea moss, press it down and gently try to cover the muffin mixture over the sea moss, but no worries if you can’t cover completely

  6.  Bake for 25 minutes.

  7. Remove muffins from oven and cool completely in the pan.

  8. Store in the fridge in an airtight container.
