Pumpkin Protein Muffins

Ingredients

Makes 12 muffins

  • 1¼ cups oat flour

  • 1 cup pumpkin puree

  • ¾ cup plain Greek yogurt

  • 2 large eggs

  • ½ cup Truvani vanilla or pumpkin protein powder

  • ½ cup coconut sugar

  • ½ ripe banana, mashed

  • ½ teaspoon pumpkin pie spice

  • 1 teaspoon cinnamon

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

Instructions

1. Preheat the oven to 350°F. Grease a 12-cup muffin tin or line with muffin liners.

2. Mix the wet ingredients. In a large bowl, combine the pumpkin puree, Greek yogurt, eggs, mashed banana, and coconut sugar. Mix until smooth.

3. Add the dry ingredients. Stir in the oat flour, protein powder, pumpkin pie spice, cinnamon, baking powder, and baking soda. Mix just until combined, being careful not to overmix.

4. Fill the muffin tin. Divide the batter evenly among the 12 muffin cups.

5. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.

6. Cool and serve. Let the muffins cool in the pan for about 10 minutes before removing.
