Turkey Meatballs w/ Maple Dijon Sauce
Ingredients: Makes 25
2 lbs ground turkey
1 large egg, lightly beaten
½ cup almond flour
⅓ cup breadcrumbs
½ onion, finely diced
4 garlic cloves, minced
1½ tsp fresh rosemary, finely chopped
1½ tsp fresh thyme, finely chopped
1 tsp kosher salt
½ tsp freshly ground black pepper
Avocado oil for baking
Sauce:
1 cup chicken broth
¼ cup Dijon mustard
¼ cup maple syrup
2 Tbsp mayonnaise
Optional: extra rosemary & thyme for garnish
Directions:
Preheat oven to 400°F (200°C).
In a large bowl, combine turkey, egg, almond flour, breadcrumbs, onion, garlic, herbs, salt, and pepper. Mix gently and don’t overwork.
Roll into meatballs (about 35–40 small or 25–30 larger).
Place on a parchment-lined or lightly oiled baking sheet. Spray or drizzle lightly with olive oil.
Bake 18–22 minutes, until mostly cooked through and lightly golden.
While baking, prepare sauce in a large skillet or saucepan: whisk broth, Dijon, maple syrup, and mayo over medium heat until slightly thickened.
Transfer baked meatballs into the sauce and simmer 3–5 minutes, gently tossing so they absorb flavor.
Garnish with fresh herbs and serve.
