Skillet Herby Frittata

Serves 4 people

Ingredients:

  • 8 large eggs

  • 2 cups fresh baby spinach or chopped kale

  • 3 green onions, thinly sliced

  • ¼ cup fresh dill, roughly chopped

  • 1 tbsp avocado oil or ghee

  • ½ tsp sea salt

  • ¼ tsp black pepper

  • Garnish: Extra sprigs of fresh dill or oregano

Instructions:

  1. Preheat your oven to 375°F.

  2. In a large bowl, whisk the eggs, water (or milk), sea salt, and black pepper until well combined.

  3. Stir in the sliced green onions, chopped dill, and fresh spinach.

  4. Heat the oil or ghee in a 10-inch oven-safe skillet (cast iron is best) over medium heat.

  5. Pour the egg mixture into the hot skillet. Let it cook on the stovetop for about 2–3 minutes without stirring, just until the edges begin to set.

  6. Transfer the skillet to the preheated oven.

  7. Bake for 12–15 minutes, or until the center is set and no longer jiggles when you move the pan.

  8. Remove from the oven and let it cool for 5 minutes. Top with extra fresh herbs before slicing into wedges.
