Shaved Brussels Sprout Salad

Serving size: 4

Ingredients:

  • 1 lb brussels sprouts, ends trimmed

  • ½ cup manchego cheese, crumbled or finely shaved

  • ½ cup dried cranberries

  • ¼ cup toasted pine nuts

  • 2 green onions, thinly sliced

  • 3 tbsp extra virgin olive oil

  • 1 tbsp fresh lemon juice

  • 1 tsp honey

  • ¼ tsp sea salt

  • ¼ tsp cracked black pepper

Instructions:

  1. Using a food processor with a slicing attachment or a sharp knife, shred the Brussels sprouts until they have a fine, slaw-like consistency.

  2. Place the shredded sprouts in a large mixing bowl and toss with the sliced green onions.

  3. In a small jar, whisk together the olive oil, lemon juice, honey, salt, and pepper until well emulsified.

  4. Pour the dressing over the sprouts and toss thoroughly. Let the salad sit for 10 minutes; the acidity in the lemon will slightly soften the raw sprouts.

  5. Fold in the dried cranberries and toasted pine nuts.

  6. Top with the crumbled Manchego cheese just before serving to keep the cheese texture distinct.
