Glow Bites
High-protein, antioxidant-rich snack

Prep time: 15 mins (+ chilling time)
Ingredients:
1 ½ cups Creamy Natural Peanut Butter.
½ cup Vanilla Protein Powder
½ cup Dried Goji Berries.
2 tbsp Coconut Oil (melted).
2–3 tbsp Raw Honey (you may need slightly less honey now that you have coconut oil).
1 cup Unsweetened Coconut Shavings (shredded), divided.
½ cup for the mixture.
½ cup reserved for rolling.
Instructions:
Combine in food processor the peanut butter, protein powder, goji berries, melted coconut oil, honey, and half (½ cup) of the coconut shavings into the food processor.
Pulse until the mixture is uniform. If the dough feels a bit too dry (which can happen depending on the brand of protein powder), add one extra teaspoon of coconut oil or water until it clumps together like cookie dough.
Because of the melted coconut oil, the mixture will be quite soft at first. Place the bowl in the fridge for 45–60 minutes. This is when the coconut oil begins to solidify, turning the dough from sticky to easy-to-mold.
Scoop tablespoon-sized portions and roll them into 1-inch balls.
Immediately roll each ball in the bowl of reserved coconut shavings. The slight tackiness of the peanut butter will help the shavings stick perfectly.
Place the balls on a tray and refrigerate for another 15 minutes. Once the coconut oil "sets," these will have a fantastic, fudge-like bite.
